BARCELONA
- Some of the most revolutionary chefs
in Spain are based in Catalonia. This region
in North-Eastern Spain is one of the most
influential culinary regions not only for
traditional cooking but also for Spanish
Modern cuisine. Barcelona, culinary capital
of Catalonia is therefore, one of the
centers of New Spanish cuisine. Being in the
vanguard of Spanish art, architecture,
interior design, fashion and other artistic
expressions, gastronomy could not be an
exception.
- It is here where Monica, our kind and
young cooking teacher, has lived, studied
and developed her cooking career. Monica has
worked for some of the most cosmopolitan
restaurants in Barcelona such as Julius-
owned by the popular TV star Andres
Buenafuente, and the Tragaluz restaurant
group- which has set the standards of the
Barcelona restaurant scene since the
eighties, specializing herself in Author
cuisine. At present she works for one of the
newest four star hotels in city that stands
up for its modern architecture and
interiors.
- For our cooking classes, Monica has
adapted recipes from some of the most
influential Catalan chefs of the moment,
combining regional and exotic ingredients
with the most innovative cooking techniques
and personal creativity, resulting in
surprising menus of contrasting flavors.
- Featured chefs include internationally
acclaimed Ferran Adria: considered by many
as the most revolutionary chef in the world,
his cooking is based on the combination of
texture, temperature and taste with a touch
of humor. As superstar French chef Paul
Bocuse says, He´s doing the most exciting
things in our profession today. Although
most chefs are still men, some women have
gained national and international
recognition for their personal cooking.
- Carmen Ruscalleda, chef of the 2
Michelin-starred ´sant Pau and its sister
restaurant in Tokyo, is one of them. Based
on her creative interpretation of the
Catalan culinary tradition- that has always
combined sweet and savory, fish and meat,
hot and cold, vegetables and fruits, Carmen
has developed recipes that are both complex
and balanced. Some of them can be learned in
our cooking class.
- This unique cooking class takes place at a
special venue: a private home in a quiet
quarter North of Barcelona. Nice
surroundings for a charm penthouse with a
large kitchen and terrace overlooking the
Tibidabo Mountain where, with the assistance
of Monica, the group will prepare a complete
avant-garde menu which doesnt require
professional equipment at your kitchen.
- After the two and a half hours hands-on
cooking class, enjoy lunch or dinner based
on the prepared recipes accompanied by a
selected Spanish wine.
